This one is really easy and tasty:

Pollo Chile Verde

Calories 282; Fat 14g; Carbs 14g; Protein 30g

Serves 4

Ingredients:

8 large boneless, skinless chicken thighs (1.5 pounds) cut into 2 inch pieces
Kosher salt and freshly ground pepper
Flour
1T Olive Oil
1 large sweet onion (or red onion), finely diced
4 cloves of garlic, minced
2 chiles stemmed, seeded and diced (Anaheim, poblano, or New Mexico green chiles)
1 yellow bell pepper stemmed, seeded and diced
2 large jalapeno chiles stemmed, seeded and diced
½ t dried oregano
½ t ground cumin
1 c chicken broth
1 cup salsa verde
Juice of 2 limes
½ c reduced fat sour cream
Grated zest of one lime


Season the chicken pieces with salt and pepper. Dust with flour. Heat olive oil in LARGE skillet over medium heat. Brown the chicken pieces. Transfer chicken to a bowl.

Sauté onions, garlic, chiles, bell pepper until tender (at least 5 minutes). Add oregano and cumin and sauté for one additional minute. Stir in salsa, juice of one lime, broth, and chicken (with any accumulated juices). Cover pan and reduce heat. Simmer for 35 to 40 minutes.

Blend sour cream, juice of second lime and zest of one lime. Drizzle a bit over each serving.

Here's a great summer salad with a refreshing taste:

Carrots with Spices

2 carrots, peeled
2 tablespoons chopped fresh parsley
2 tablespoons fresh orange juice
1 1/2 teaspoons fresh lime juice (or lemon depending on preference)
1 1/2 teaspoons olive oil
Salt & black pepper to taste
Cayenne pepper to taste
Cinnamon to taste
Cumin to taste

Either spiralize or shred carrots. In a mixing bowl, wisk all other ingredients together and add to carrots. Marinate in fridge and enjoy!

I made this salmon last night and it got rave reviews!

MAPLE GLAZED SALMON

1/2 cup maple syrup (use pure maple - it tastes better)
1/4 cup cider vinegar
2 tbsp whole-grain Dijon mustard (or regular Dijon if you prefer)
2 garlic cloves, pressed
1/4 tsp salt
1/4 tsp coarsely ground black pepper
4 skinless salmon filets (4oz each)
1 tbsp lemon pepper seasoning

Combine syrup, vinegar, mustard, pressed garlic, salt, and black pepper in a microwave-safe bowl (make sure it's high enough b/c it might boil over if it's not). Microwave on high 6-8 minutes until reduced by half. Cool slightly.

Heat grill pan ove rmedium heat. Season salmon with lemon pepper. Lightly spray pan with nonstick cooking oil; add salmon top side down. Cook 10-12 min or until salmon flakes easily with a fork, turning once. Brush salmon with glaze during last minute of cooking. Pour any remaining glaze over salmon before removing from the pan.

Serve with veggies and brown rice!

Yield: 4 servings

I think this glaze would be really good on pretty much anything! And it's sooo easy!

I agree ... in fact it might be really good on pork.

Here's another favorite of mine:

Asian Meatballs with Peanut Sauce

Calories 330; Fat 12g; Carbs 7g; Protein 20g

Makes 24 meatballs; serves 4

Sauce

4 T peanut butter
2 T soy sauce
4 t sesame oil
1 c chicken broth

Meatballs

1.25 pounds ground chicken or turkey
2/3 c scallions (chopped finely)
1 ½ t garlic chile paste
2 ½ t grated ginger
1 ¼ T soy sauce
¼ c plain bread crumbs

¼ c chopped peanuts for garnish


Blend PB, soy sauce, sesame oil, and broth in small bowl and set aside.

Combine ground meat, scallions, chile paste, ginger, soy sauce, and bread crumbs until well combined. Form 24 meatballs (about 1 T of meat mix per meatball). I use a small ice cream scoop to get uniform meatballs. Generously spray bottom of large skillet on medium-high heat. Brown the meatballs on both sides (3 to 4 minutes).

Pour sauce into pan, reduce heat and cook until bubbling. Add additional broth if required to get sauce of desired consistency. Roll meatballs to coat with sauce.

Serve and spoon additional sauce over meatballs. Sprinkle peanuts over meatballs. Serve with stir-fried vegetables.

Sounds yummy and soooo healthy with those dark leafy greens! I throw kale into my fruit smoothies in the mornings because it adds a nice "grassy" taste and also provides tons of healthy phytonutrients!

White Chili

Calories 300; Fat 14g; Carbs 18g; Protein 40g

Serves 6

Ingredients:

1 Rotisserie Chicken (meat removed from carcass, skin removed and meat shredded)
2 onions, chopped
4 cloves garlic, minced
2 T olive oil
1 Jalapeno pepper, seeded and minced
7 oz can chopped green chiles
2 t powdered cumin
1 t dried oregano
¼ t cayenne pepper
½ t salt
3 cups chicken broth
1 can cooked white beans, rinsed and drained
½ cup fresh cilantro. Chopped
1 cup shedded Monterey jack cheese (or cheddar)
1 bunch scallions, sliced
3 avocados, cubed

Heat oil in a dutch oven or soup pot over medium heat. Saute onions until lightly browned and tender. Add garlic for last 2 minutes. Add Jalapeno, chiles, cumin, oregano, cayenne, and salt. Saute for 1 minute.

Add broth, chicken and beans. Bring to a boil, reduce to simmer. Cover and cook for 25 minutes.

Stir in cilantro, scallions and cheese and stir well until cheese is melted and sauce is thickened.

Serve with additional scallions and avocados for garnish.
